A small neighborhood-style wine bar and tapas restaurant, Bin 69 will focus on a Mediterranean-style menu of small-plate dishes that build on the fresh ingredients of the islands.

Signature items include:

  • Innovative open-faced, home-baked flat breads such as the Blackened Crab Cake BLT
  • Crisp Serrano ham wrapped Tasmanian salmon with roasted Haiku asparagus and saffron lemon fumé
  • Cabrales cheese flan with Kalamata olive chutney, serrano ham breadsticks and spicy Kula greens
  • Braised Maui beef short ribs with Hämäkua ali‘i mushrooms.

An array of desserts, all made on-site, features arborio rice pudding, panna cotta, churros, and mini malasadas.

Chef Justin Pardo, who has worked at Maui's top restaurants, considers the cuisine at Bin 69 merely a continuation of his mom's cooking at his childhood home in Cuba. Even though he impressively integrates the techniques of Spain, southern France, and Italy into his Bin 69 menu, he still remains true to that home-cooked simplicity.
